Kruzing Healthy Pumpkin Crumb Muffins

Ingredients

Muffin

1 1/2 Kruzing Healthy Low Carb Baking Mix

1 Tsp Cinnamon

1 Tsp Pumpkin Pie Spice

1 Tsp Baking Powder

1/2 Tsp Baking Soda

1/4 Tsp Salt

1/3 Cup Melted Butter (or melted coconut oil)

1/2 Cup Golden Monkfruit

1/4 Cup Gentle Sweet or equivalent

2 Large Eggs

2 Tsp Vanilla

1/4 Cup Greek Yogurt

1 Cup Pumpkin Puree


Crumb Topping

1/4 Cup Almond Flour

2 Tbs Oat Fiber

2 Tbs Whey Isolate Protein Powder (I have not use the optimized in this I do not know if it will work)

1/4 Cup Golden Monkfruit

1 Tsp Cinnamon

1/4 Cup Melted Butter


Directions

Muffin
  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with muffin liners or lightly grease each cup.

  2. Combine Dry Ingredients: In a large bowl, mix together: Stir until the ingredients are well combined.

  3. Mix Wet Ingredients: In a separate bowl, whisk together

  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not over-mix to keep the muffins light and fluffy.

  5. Fill Muffin Pan: Divide the batter evenly among the 12 muffin cups, filling each about ¾ full.

Crumb Topping
  1. Combine Topping Ingredients: In a small bowl, mix together:

  2. Sprinkle Topping: Evenly distribute the crumb topping over each muffin, pressing lightly so it adheres to the batter.

Bake
  1. Bake the Muffins: Place the muffin pan in the preheated oven and bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
